Len is right, aim for one that is already starting to shoot.
Its becoming more & more common for veg to have post harvest treatments which inhibit shoot elongation so that shelf life is greatly extended.
It has to be something very special to be bothering with ethanol baths & GA-3 treatments to break dormancy.
Just make sure they are locally produced, the imported ones are often cold stored for yonks so often aren’t viable.

We use a pedal powered uni-ark mill, it takes about 15-20 minutes or so to run a kg of grain through twice, the first time coarse with the steels and the second time set fine with the stone mill plates.
After sifting out the bran its as fine as any commercial flour.
Its not a question of whether or not we can grasp EROEI or not.
Personally i think CSG & syngas are far too extremely risky long term, in terms of contaminating ground water aquifers probably for centuries.

I hand wash mine with a dash of wool wash,rince well, then while they are just damp bung them in an empty jar & run them through the PC for 210Min @ 121c @ 15PSI, that kills almost everything.
