I got given a couple of kg of persimmons the other week. They’re quite squishy and need to be used. I’m short of time so I’ll just skin/de-seed, pulp and freeze them for now. Does anyone have a recipe for jam or something similar I can use the pulp in?
In the past I have bought boxes of squishy ready to eat persimmons from the local farmers market. I froze the pulp in usable size portions. When needed they were thawed and blended with either cottage cheese, creamed cheese or pulp over ice cream.
Another use is to add the pulp to cake batter. Also nice if added to a fruit salad.
