Metu, thanks from me as well for the link to the recipe. I made a double batch yesterday and am very pleased with the results! I made a delicious Lemon Shortcake with it last night – yum yum! Lemon tarts are this afternoon’s project 🙂
I made my first batch of lemon butter using the link here, but think I accidentally added an extra lemon of juice and found it a little runny, but tasty all the same!

The beauty of my favourite lemon butter receipe is that you boil it and it last a long time if stored in sterilised jars. I make this all the time, often with Tahitian limes from my tree rather than lemons:
I’ve used Molly’s recipe too with success, though my lemons were large so it was a bit runny. I ended up measuring my lemon juice (about 1/4 cup per lemon) and that helped. I’ve had a few jars on a shelf (waiting for Christmas) for a few months now with no issues.
