Best duel use breed with colour sex chicks?

There has been discussen in our house about having meat chooks rather than eating the odd roster thats unwanted, but if we do we want a heratage breed that also is a layer and we can tell hens from roosters at an early age, hopefully a breed that will set and hatch there eggs that are good mums alot to ask i know.
we did look at crossing light susex and rodisland reds as chicks colour sex but then we have to keep pure and crosses so hopeing for a breed that covers all this.
It should be in permiculture books but the ones i have dont give a spersifice breed.
also sorry for the bad spelling have taken some strong pain killers for a bad back and am in a little lala land :laugh:
They are supposed to be a good eating bird, and fair layers, with a reputation for laying through winter. I have read also that you can sex the chickens at a week or so of age (only the salmon favs), when their first wing feathers start coming in. The females’ wing feathers will be brown, and the males’ black. They are also suppoed to be good mothers, and able to cover a lot fo eggs at a time.
I want to get some faverolles.From what I have read, they sound like winners all round really. Someone else with more knowledge might know better than me though 🙂
