I’ve just finished reading David Gillespie’s “Sweet Poison” and his latest book “Sweet Poison Quit Plan”, and found them both illuminating, and also quite scarey. (see http://sweetpoison.myfreeforum.orgfor further info). It explains a lot as to why I can’t lose weight even with a relatively healthy diet, nor can hubby. He’s agreed to go on a 1 month fructose free trial with me, starting today, which is great.
However, there is a snag. Jan-Feb is prime bottling and preserving time for fruits in the garden. Would like to make some jams and jellies with the lower fructose fruits (such as plums), but of course this would traditionally need to use sucrose as the preserving agent. Sucrose is 50% fructose (bad) and 50% glucose (good), so not really an option.
I was wondering if anyone has tried using glucose instead in preserving, and what your results have been? Glucose in dried form is sold as dextrose monohydrate, found in the home brew section of the supermarket.

why not dry them instead, or just bottle/water bath them – you don’t need sugar for bottling
and it;s the hidden sugars in our diets, that come with jams etc – do something else with them instead –January 10, 2012 at 9:55 am #518491
Hi sprite, tried the link but didn’t work. We have been looking at this recently as well. We were also having trouble loosing weight and had a look at Dr Mercola’s body typing. We had recently cut out wheat (again) and watching fructose which also helped and did a body type from Dr. Mercola and adjusted diet accordingly and I have lost 5kg in just over a week. Happy with that.
We use honey making jams etc. and that works well, but not preserving yet as we are on a new property.January 10, 2012 at 10:20 am #518492

Sprite,I dont add sugar when preserving,though I only do the nectarines.I just add water,I’ve cut back on sugar for a while now also salt is rarely added to my meals.January 10, 2012 at 1:21 pm #518496
To answer your question, no glucose doesn’t work. I tried to make sweet chilli sauce with dextrose (powdered glucose) and it reverts to its powdered form. Looks awful and I’m not sure it would keep.
I went sugar free this time last year. DH went sugar free last week and he’s already looking slimmer (probably water weight/bloating). I was still eating wheat and plateaued in about May. In August I found the leptin reset (leptin is the hormone which regulates insulin use) and started on that (no grains at all) and I’m down a bit more. I do eat dairy though, so not as slim as I’d like to be. I’m reducing it slowly though.
