You know when you just too many of the same vegie growing in your vegie garden.  What do you do with 12 eggplants or a 40 cm zucchini?  Please share with us your recipes for times of vegie glut.  :-)

Thanx for the recipe, Leandrea. :-) I must say that I've gone off eating piggies these days. The treatment of the animals we eat is of great concern to me. This has caused me to eat only fish and free range animals although I'm eating less meat altogether. :-)

I read somewhere that you dry your tomatoes and then freeze them. When you want to 'create' some, you take out the amount you want and plonk them in oil. Obviously they need a little while to thaw out. I confess I don't tend to bother with the oil, just use them as they are.
