Comfrey
I have been reading about comfrey as a food in the Isabell Shipard book "How can I be prepared with Self-Sufficiency and Survival Foods?". Apparently it is illegal in Australia to use comfrey for therapeutic reasons, ie to take comfrey as a medicine, but it is perfectly legal to eat comfrey as a vegetable so it says in that book.
That sounds ridiculous to me!
There is a recipe in the book for comfrey fritters and the suggestion that drying and crushing comfrey leaves during the growing season allows them to be available for eating during the winter dormant season. If I ever get around to drying the leaves I thought to try them as a thickener in soups and stews.
Does any one else have information on the use of comfrey?
